marinara sauce canning

Well, it was spur of the moment and I decided to can marinara sauce. It was a great idea and worked really well....  I used 40 tomatoes and chose roma tomatoes.  With all of the other veggies and jars i had to buy, it probably cost pretty close to $35 to make 12 pints.  I would have definitely used at least half of the tomatoes something other than roma, it made the sauce very very strong.  Other than that, i would next time can them in quart size containers rather than pint.  It sure did beat buying the nasty stuff you get on the shelf at the grocery store and it was nice to have fresh sauce and know that I made it  A learning process with a few adjustments or changes and next time I think I will have it down. 




BERRY JAM, NO SUGAR OR PECTIN

I did my first canning project and absolutely loved it!  I had so much fun and it was so rewarding to be able to give jars to my family and friends and co-workers.  Everyone who tried it ate it all up in a single sitting and asked for more and could not believe that it did not have any sugar at all!!!  I felt like it was a sucess, i water bathed the jars istead of pressure cooking and it seamed to work out pretty good.  All i used was strawberies 6 pints, 4 pints of blackberries, 1 small green apple (instead of pectin)1 lemon (a teaspoon in each jar to help preserve), 4 cups of honey.  simple :)




I had a few people suggest only blackberry jam, i just replaced the pints of strawberries with blackberries and it came out perfect.  Did you know that jam on the shelf usually has 1 part fruit to 6 parts sugar.  That is insane.
